The harvest The chalky soil and the particularity good exposure to sunlight of the Roullet vineyards ensures that the grape “ugni blanc” ripers in excellent conditions, before being pressed and vinified on the estate.
Distillation Respecting the tradition we continue to use ancient hand-beaten copper stills, such as those used by the founder in the XVIII century to carry out the double distillation. The white wine obtained from the harvest is then distilled to give an alcohol fo 30% vol. Part of this alcohol is distilled a second time to obtain a transparent eau-de-vie of 70% vol.
Time of ageing The main difference between our cognac and most others is that the time of ageing is twice as long as required by law, and the wine is from a single vintage. After distillation the eau-de-vie is transfered into limousin oosk barrels. The ageing process has began.
